A healthy take on a chocolate muffin. Not too sweet for breakfast. Just sweet enough for a snack.

- 1 ½ cups all-purpose flour (195 grams by weight)
- ¼ cup cocoa (20 grams by weight)
- 1 ½ teaspoon baking powder
- ½ teaspoon salt
- 2 large ripe bananas, mashed (about 1 cup)
- ½ cup granulated sugar
- ½ cup vegetable oil
- 1 egg, beaten
- ¼ cup milk
- 1 teaspoon vanilla
- ⅔ cup chocolate chips
Preheat oven to 350°F. Prepare muffin tin with either muffin liners or magic cake release (see notes for recipe link).
In a large bowl, whisk flour, cocoa powder, baking powder and salt.
In a separate bowl, mix mashed bananas, sugar, vegetable oil, egg, milk and vanilla.
Make a well in the center of the flour mixture. Pour in the banana mixture. Stir gently until almost all of the flour is incorporated. Fold in chocolate chips, mixing in remaining flour as you do so.
Scoop batter into prepared muffin cups. Bake at 350°F for 20-25 minutes until a wooden pick inserted in center of largest muffin comes out clean.
Remove immediately from pan and cool on wire rack.

- To easily mash bananas, use an electric mixer. Don’t have a mixer? Use a fork or potato masher in a bowl, or mash them in a large baggie.
