Easy Slow Cooker Corned Beef and Cabbage Dinner

Perfect for St. Patrick’s Day, this easy Corned Beef and Cabbage Dinner has main course and sides all cooked in the slow cooker! You’ve never had potatoes or cabbage taste so good!

I wait all year for corned beef to be on sale in March! I love this meal!

When potatoes, carrots and cabbage are seasoned and served like this, you won’t be able to get enough! That’s right, even the vegetables in this meal are delicious!

I love any dinner that I can throw into a slow cooker. Easy dinners make me a happy woman! Prepare to be a happy person with me and give this simple recipe a shot!

Corned Beef and Cabbage Ingredients

My favorite part of this meal is that most of the seasonings already come with the corned beef. Throw in a little extra flavor with some garlic and bay leaves, and you’re good to go!

Corned Beef: In March, you can find corned beef on sale in most grocery stores. You’ll usually find the meat packaged in a plastic sleeve with a little packet of seasonings somewhere next to the meat. Be sure to find that seasoning packet!

Onion: Pick your favorite! I use brown or white, whatever I have on hand.

Garlic

Bay Leaves

Red Potatoes: Red potatoes are nice to use with this meal because they hold their shape well in the slow cooker. Plus, a small potato means less cutting in the prep step. If you’re in a pinch and only have brown or white potatoes, go for it.

Carrots: I like to use baby carrots, but large carrots can easily be substituted.

Cabbage: I usually use green cabbage, but I’ve also used red cabbage with great success.

How to Make Corned Beef and Cabbage in the Slow Cooker

Because cabbage cooks quicker than a nice big roast, you’ll be adding ingredients into the slow cooker at different times. First, you’ll add the onion, corned beef and seasonings and cover with water. A few hours later, you’ll throw in the potatoes and carrots. A couple of hours before serving, you’ll add the cabbage on top.

To make this go smoothly, I cut all the veggies in the morning and keep them in a container in the fridge until it’s time to add them. It takes an extra 30 seconds throughout the day to throw in the next layer of veggies. Easy peasy and oh-so yummy!

Easy Slow Cooker Corned Beef and Cabbage Dinner

Ingredients
  

  • 3-4 pounds corned beef brisket with seasoning packet
  • 1 onion, cut into large chunks
  • 3 cloves garlic
  • 2 bay leaves
  • 2 ½ – 3 cups water
  • 2 pounds red potatoes, quartered
  • 2 cups baby carrots
  • 1 small head of cabbage, cut into wedges

Instructions
 

  • Place onion in bottom of a 6-quart slow cooker. Place corned beef on top. Sprinkle with seasoning packet. Pour enough water for it to just about cover the corned beef. Add garlic and bay leaves. Cook 8-10 hours on low.
  • After 3 hours, add potatoes and carrots.
  • 2 hours before serving, add cabbage wedges.
  • Remove corned beef from slow cooker and let rest 15 minutes before slicing. Serve with potatoes, carrots and cabbage.

Notes

  • Red potatoes pair the best with corned beef, but other types of potatoes can be substituted if needed.
  • Use 2 large carrots, cut into coins, to substitute for baby carrots.
  • Red or green cabbage can be used.
